Lead cook

Lead Cook for L'Américain at American Place Casino, Waukegan, IL. The role requires a skilled and disciplined professional with a strong foundation in traditional American cuisine, who leads by example and guides and supports the kitchen team in daily prep and service.

Responsibilities

Participate in prep and service; Oversee and support all kitchen stations; Manage closing shift responsibilities; Ensure required paperwork and checklists are completed; Compile prep and production lists; Monitor inventory; Ensure food items are prepared and stored according to rotation and safety standards; Train and retrain kitchen staff; Communicate clearly across shifts and with team members, cooks and leadership; Maintain a clean, organized and efficient workspace; Report all issues, incidents or discrepancies to supervisors promptly; Assist with special projects and events; Participate in safety meetings; Keep accurate records of daily operations and team performance

Requirements

High School Diploma or GED; Minimum five (5) to seven (7) years' experience in high-volume line cooking or production cooking in a full-service dining or food service establishment; At least two (2) years' supervisory experience preferred; Ability to read recipes, production lists, diagrams and logs; Good basic mathematical, organizational and communication skills; Ability to lift up to 25-30 lbs; Ability to stand for long periods; Ability to navigate crowded spaces; Flexibility in bending and reaching; Adaptability to casino conditions including bright lights and noise; Able to obtain/maintain necessary licenses and/or certifications required by local gaming regulations; Able to obtain/maintain Food Handlers ServSafe certifications as required by Lake County Health Department regulations
